Cowboy Caviar


2 Tbsp red wine vinegar
1 1/2 tsp Olive Oil
1 clove garlic, minced
1/8 tsp. pepper
1 firm avacado
1 can black beans
1 can corn
1/3 c. sliced green onion
2/3 c. chopped cilantro
1/2 lb. tomatoes, coarsely chopped
sea salt to taste
a squeeze of fresh lemon juice


Dice your ingredients and mix all together right before serving.

How to Serve:
With tortilla chips as a dip, a filler for tacos or on lettuce for a southwestern salad!
